Tapa Organic
Our excellent organic breads, tarts and cakes are made by hand from the finest organic ingredients at our bakery in Glasgow. We are certified organic by the Soil Association and you can be confident that our products are free of artificial flavours, bulking agents and chemical “improvers” - we don’t use anything you wouldn’t use at home.
Our range of nutritious breads includes wheat-free (Spelt, Spelt & Quinoa, 100% Rye Sourdough and Borodinsky) and yeast-free breads (Irish soda bread, Sourdough, 100% Rye Sourdough and Borodinsky).
You can buy direct from the bakery or the coffeehouse – both are open 7 days – from selected retailers and from the Partick Farmers’ Market
Boules – hand shaped loaves
Batard
A classic white loaf with a soft crust baked on the sole of the oven in the traditional way. This makes great fried bread for tapas, excellent bruschetta and is nice toasted as a base for poached eggs.
Ingredients: organic wheat flour, water, semolina, sea salt, yeast
Rye & caraway
A great chewy crust, lots of caraway and a lovely sour rye tang; this bread is great with lox, salami, pastrami, corned beef, sauerkraut & cheese. We make them large and small.
Ingredients: water, organic wheat flour, Scottish stoneground organic rye flour (30%), organic caraway seed, sea salt, yeast.
Medium rye
Serious bread! A well-fired loaf with a good crust and no-nonsense centre. This is a great base for eggs Florentine and also makes a mighty mature cheddar & red onion sandwich.
Ingredients: Water, organic wheat flour, Scottish stoneground organic rye flour, organic wholemeal flour, sea salt, yeast.
Light Rye
This classic county bread has a chewy crust and an open texture. Makes great toast, excellent bruschetta, fantastic sandwiches...what doesn't this bread do well?
Ingredients: water, organic wheat flour, Scottish stoneground organic rye flour (25%), sea salt, yeast.
Sourdough
A chewy crust and a tangy, moist interior make this the perfect loaf for poached eggs. It has excellent keeping qualities and a hearty, rustic appearance.

Malted Pumpkin Seed
Malted grains give this loaf a lovely roasted flavor and enhance the natural sweetness of the wheat. Studded with pumpkin seeds for great texture and extra flavor.

Pane Italiano
A crusty loaf made the traditional way – stonebaked after a long proving time that gives the bread a slight sourness. Lovely smeared with butter.

Irish soda bread
A more-ish Irish classic that breaks into four farls for easy sharing. It is made without yeast.
Ingredients: organic soda bread flour, organic milk, organic butter, organic wheat flour, organic lemon juice, baking soda, sea salt.
Struan
Baked throughout the Western Isles to celebrate the harvest, Struan is rich with organic grains, seeds, milk and honey.
Ingredients: organic wholemeal wheat flour, organic milk, organic honey, organic millet, organic cracked wheat, organic linseed, organic oats, organic sesame seed, organic egg glaze, organic poppy seed, salt, yeast.
Sunflower wholemeal
A tasty wholemeal seeded loaf.
Ingredients: organic wholemeal wheat flour, organic sunflower seeds, oats, organic sunflower oil, yeast, salt

Light Wholemeal
This is a 50/50 mix of organic white and stoneground wholemeal flours, made with saved dough and a long fermentation for extra softness & flavour. Baked in a farmhouse tin. Fantastic for sandwiches, toast and kids, this bread comes regular or family sized.

The Great White Organic Loaf
Toast, sandwiches, toasted sandwiches, French toast – this versatile loaf does it all. A traditional tin loaf with more flavour and goodness than your average sliced white and none of the fat, soy, or chemical improvers. What's not to love?

Spelt (wheat-free)
Spelt is an ancient, nutritious grain that has been grown in Europe for thousands of years. It is not as high yielding as wheat and sadly has fallen from favour as a commercial crop. Spelt has a more fragile gluten structure than wheat and is more easily digested. It also has more protein, fats and crude fibre.
This is a moist loaf that is an excellent substitute for wheat breads and is delicious in its own right. Spelt is a great alternative to wheat for people who have wheat intolerance. However, it is very similar to wheat and is therefore not suitable for people with a wheat allergy.

Borodinsky (wheat-free)
Made to a Russian recipe, this tasty rye bread is flavoured with molasses and coriander. It is made using a sourdough and has no added baker’s yeast.
Ingredients: water, Scottish stoneground organic rye flour, stoneground organic light rye flour, organic blackstrap molasses, organic malt extract, sea salt, organic coriander.
Power to the People – spelt with quinoa (wheat-free)
A tasty, moist loaf packed with protein and other nutrients. Quinoa is a seed native to the Andes with a complete protein. It offers more iron than most grains and contains high levels of other nutrients.

100% Rye sourdough (wheat-free)
Sour sticky black bread made without baker’s yeast that keeps for days. This is best sliced thinly. Try it with butter and something sweet for a sweet-sour treat, or with salmon, crème fraiche and dill piled on top.

Specialist Breads
Bagels
Traditional hand-made bagels – boiled, not steamed, for a glossy crust and dense, chewy interior. Plain or topped with seeds or kibbled onion.
Ingredients: organic wheat flour, organic vegetable oil, malt extract, yeast, salt.
Baguette
A classic full-flavoured baguette with an excellent crust and soft interior. Best to eat it on the day it's made but can be frozen and reheated or turned into garlic bread or crostini later.

Foccacia
Light as air and gently flavoured with organic extra virgin olive oil and rosemary, olives or sun-dried tomatoes. Dunk it in olive oil and enjoy or split it, stuff full of tasty treats and toast it to crispy perfection. 6 – 8 portions.

Brioche
Perfect buttery brioche – lovely served warm with a touch of jam or eaten just as it is.
