The list below is not exhaustive and if there’s something you’d like us to stock please let us know. The bakers will bag up flour for you if they have enough to spare – we use organic strong white, plain white, wholemeal wheat, wholemeal spelt, light rye and stoneground Scottish Rye from Golspie Mill in Sutherland. Almost everything we stock is certified organic.

Recipe
Something tasty to make with your Tapa groceries
Broccoli, spinach & chickpea tagine
- 150g cous cous (we stock Greencity cous cous)
- 300ml boiling water
- 4 Tbsp olive oil
- 2 white onions,
- finely chopped 2 – 3 cloves of garlic (we stock handy jars of crushed garlic)
- 1 tsp ground cumin
- ½ tsp ground cinnamon or a small cinnamon quill
- 3 Tbsp chopped coriander
- 3 Tbsp chopped parsley
- 150 broccoli chopped into florets
- 150g fresh spinach, washed and roughly chopped
- 2 x 400g tins of chickpeas (we stock Suma organic chickpeas)
- Salt & black pepper ( we have Maldon sea salt on our shelves)
- Harissa or sambal oelek to serve.
Heat the olive oil in a heavy based pan and add the onions. Sauté until they are soft and translucent. Add the crushed garlic, cumin and cinnamon and stir until fragrant. Add the chopped broccoli and spinach, the chickpeas with their liquid, and a good pinch of salt. Bring to the boil then cover and lower the heat. Simmer for about 15 minutes until the broccoli is just done. Stir in the herbs toward the end of the cooking time.
While the chickpeas are simmering, tip the cous cous into a bowl and pour the boiling water over the top. Cover and let the cous cous absorb the water. When you’re ready to serve, fluff up the cous cous with a fork, season with a little salt & pepper and spread over a serving dish.
Check the seasoning of the chickpea mix and add more salt if necessary. Add the freshly ground black pepper. Spoon the chickpea mixture over the cous cous and serve with harrissa or another spicy chilli paste on the side.
