About Tapa:
Tapa Ltd is an independent, family-owned business. Tapa bakehouse opened its doors in December 2003. We had one table and an antiquated Hobart mixer. We developed our own bread recipes, made cakes from our grandmothers’ recipes books and cooked up big pots of fresh soup every day.
We set out to open a good friendly neighbourhood cafe with excellent coffee and good home-baked food to eat. We made, and still make, everything from scratch, including our own bread. We’ve always used organic ingredients but as we learned more about the food industry in the UK (the intensive production, concentration of suppliers, poor animal welfare standards, loss of basic nutritional value in staples...) we determined to use as many organic ingredients as possible, to source from local suppliers, and to remain independent. The bakery is now certified organic by the Soil Association because even though certification is expensive and bureaucratic, it’s as strong a statement as we can make about the importance of transparency in food production and the importance of good quality ingredients.
In July 2008 we opened a second cafe on the southside of Glasgow called Tapa coffeehouse. It has a full kitchen and offers a more comprehensive menu, including organic meats and fish sourced from Scottish farms. But it’s still a good neighbourhood cafe with great coffee and homemade cakes, where you can feed the kids anything off the menu without worrying about what went into it.
