About Tapa:

Tapa organic is an independent, family-owned business dedicated to producing fresh, quality handmade food and great coffee. Tapa opened its doors in December 2003. Our products are special because of the quality of the ingredients and the skill involved in making them. We develop recipes with nutrition and flavour in mind. Our bread making processes are designed to bring out the natural goodness and flavour of the ingredients through slow fermentation. Bread is a staple of our diet and people should be confident that the bread they eat is meeting their basic nutritional needs. Our bakery is open to the shop so everyone can see their bread being made, see the quality of the ingredients going into the loaves, and talk to the people doing the baking.

Tapa Organic Robert WintersOur southside coffee roasterie is open too – ask the roasters what they’re roasting and get them to show you the green beans in their exotic sacks.

Our breads and cakes are certified organic by the Soil Association because even though certification is expensive and bureaucratic, it’s as strong a statement as we can make about the importance of transparency in food production and the importance of good quality ingredients. We don't use cheap fillers, "improving" agents or other additives to make great bread, and most are made without added fats or sugars; many are made without bakers' yeast.

We believe that everyone should be able to by good quality food in their neighbourhoods, preferably from local, artisan producers or specialist retailers. After all, you pay for what you eat one way or another; you can save a few pennies on your grocery basket now by buying inexpensive, manufactured food from a giant retail chain but over the long run it will cost you more in terms of your health and well-being, the vibrancy of your neighbourhood, and the lost food producing skills in your community and rural areas. If you've got a good local producer or retailer, support them. We hope you enjoy visiting our stores and enjoying eating our products as much as we enjoy making them for you.
