Choose top quality, freshly roasted beans Roasted coffee beans are at their best in the first three weeks after roasting, so buying fresh is best.

At Tapa we roast our beans in small batches each week and the beans you buy from us will have been roasted within the past 3 – 4 days. We only buy 100% arabica beans – the finest quality bean. We choose certified organic beans when we can and we select one or two excellent non-organic beans if they're really fantastic, like our lovely Colombian coffee.

The Grinder

You'll get the best tasting coffee with freshly ground beans so if you can, invest in a grinder. We can grind the coffee for you if you'd prefer. Grind your coffee to suit your brewing method; if you have a stovetop or espresso machine, grind your coffee very finely. If you make your coffee through a filter or cafetiere choose a grinder that will give you a medium grind.

Brewing methods: Filter

This is the gentlest brewing method for coffee. Put 1 heaped tablespoon or so of coffee per cup in a filter paper and cone and start by drizzling water that is just off the boil onto the grounds. Pour more water over the grounds when it’s bubbled a little, making sure they are completely covered; one final pour will extract the liquid through the filter cone and into your cup.

The next easiest way to make coffee is through a cafetiere. Use approximately 2 tablespoons per cup of coffee and water just off the boil. After you pour the water into the cafetiere, give it a stir and let it draw, then top up the water before gently pressing the filter screen through.

Espresso

Espresso requires more kit to make a great tasting coffee. The secret to good espresso is in the water pressure (which should be high), grind size and quality of coffee bean.

Stovetop

Stovetop pots are our favourite. You need a fine grind size similar to espresso and remember to keep them clean & replace the seals regularly.

Jug Coffee

For a good cup of low-tech jug coffee, use a coarse grind size similar to cafetiere. The ratio of coffee to water depends entirely on how strong you like it. Pour water that’s just off the boil over the coffee, give it a stir and let it draw. Strain through a tea strainer or old sock. Easy camping coffee.

Storing your coffee beans

To keep your coffee at its best, store it in an airtight container in a cool, dry and dark place.
